When I grew up and was living in my first apartment, I saw Gingersnaps in the supermarket and bought some. These Gingersnaps are soft and chewy, made with shortening instead of butter. I always assumed the "snap" in the name referred to the strong, sharp taste of ground ginger in the recipe (1 Tbls.). I grew up eating cookies our family called Gingersnaps, made from a recipe from my fraternal grandmother.
